대한항공 데이빗 페이시 부사장은 영상에서 와인이 럭셔리한 여행 경험의 일부이며, 여행의 황금시대를 떠올리게 하는 요소라고 말한다. 고객층의 변화에 맞춰 와인에도 변화를 주기로 했고, 당시 월드 소믈리에 챔피언이던 마크 알머트가 200개 후보 와인 중 약 50종을 골랐다. 이 리스트는 구대륙부터 신대륙까지 아우르며, 시리즈는 그중 호주·유럽(프랑스, 독일)·캘리포니아 나파 밸리 세 지역을 소개한다.

호주 편에 나오는 대한항공 기내 와인은?

Murdoch Hill의 The Phaeton Pinot Noir 2022(렌즈우드와 피카딜리 밸리 포도를 50%씩 블렌딩)와 Henschke의 Mount Edelstone Shiraz 2016(에덴 밸리 쉬라즈 100%)이다. 두 와인 모두 화면에 'Available on Korean Air's First Class'로 소개된다.

Henschke의 Mount Edelstone은 어떤 와인인가?

Henschke가 약 70년 동안 60개가 넘는 빈티지를 만들어 온 싱글 빈야드 쉬라즈다. 포도밭은 1912년에 심은 16.7헥타르(40에이커) 규모의 쉬라즈 밭으로, 동향이라 뜨거운 오후 햇빛을 피한다. 영상은 블랙베리, 신선한 세이지 잎, 통흑후추, 월계수 잎 향과 부드러운 타닌을 특징으로 설명한다.

Henschke는 포도밭을 어떻게 관리하나?

1868년에 시작된 가족 와이너리로, 현재 5대 스티븐·프루 헨쉬키와 6대 자손들이 함께 일한다. 포도재배자 프루 헨쉬키는 100헥타르가 넘는 포도밭을 쉬라즈와 리슬링 중심으로 관리하며, 바이오다이나믹 대신 자신의 방식을 '프루-다이나믹'이라 부른다. 압착 후 남은 포도 껍질을 퇴비로 만들어 포도나무 아래에 뿌리고, 지푸라기 덮개와 토종 식물로 토양과 곤충을 관리하며, 양을 방목한다.

Murdoch Hill은 어떤 와이너리인가?

애들레이드 힐즈의 다우너 가족 와이너리다. 줄리·찰리 다우너 부부가 1998년 1930년대부터 가족이 농사짓던 땅에 와인 브랜드를 세웠고, 아들 마이클 다우너가 2012년부터 형과 함께 와이너리를 이끌며 와인메이커를 맡고 있다. 와인 이름 'Phaeton'은 할아버지가 수집한 마차 이름에서 따왔다고 앤드류 다우너가 설명한다.

    So obviously coming from such a youthful wine, '24, look at the '22 Harvest which

    Piccadilly so it gives a probably a bit more depth of color to the wine a bit

    more tannin structure whereas Piccadilly has always seemed to be foggy and misty

    I think you spoke about vibrancy and to me this is a very dangerous wine because I think

    I think you empty the glass quite quickly, it's not saturating at all, it's really very

    I think that probably appeared in my style of wine, so I try and seek, you know, that is, you know, high drinkability, but with enough interest and complexity sort of elements to the wine to be, you know, food friendly and also long lived as well.

  71. 와인 이름에 관해서도 이야기를 좀 해 주세요. The Phaeton인가요?

    And can you tell us a little bit about the name, the Phaeton?

    제가 2012년에 형과 이 와이너리를 물려받아 운영하기 시작했을 때

    Certainly, yeah. So I guess when I started this range of wines with my brother in 2012,

    I wanted each wine to have its own unique identity and story to tell.

    So each wine is slightly different in an expression.

    Michael wanted a new label, so we thought about it for a while.

    저희 할아버지가 떠올랐고 할아버지께서 수집하셨던 마차들을 이용하면 좋겠다고 생각했어요.

    and we thought we'd use the idea of my grandfather and his collection of horse-drawn vehicles

    거기서 영감을 받았죠. 그래서 이런 이름들을 생각해 냈어요. 마차들 중 하나가 Phaeton이라고 불리거든요.

    as some inspiration. So we sort of came up with these names and one of the horse-drawn vehicles

    사진이 여기 있어요. 좋은 방법일 거라고 생각했죠. 하지만 라벨에 너무 대놓고 마차를 넣고 싶진 않았습니다.

    and so I thought it'd be a good way but I didn't really want it to be overtly look like

    a horse-drawn vehicle because it might look a bit too sort of old-fashioned so

    then it was about sort of typography and making it quite simple

    여기가 와인을 발효하고 오크통에서 숙성시키는 곳이에요. 저희 Murdoch Hill 와이너리는 작은 규모로 모든 걸 다 직접 생산합니다.

    well come into our fermentation area and barrel maturation it's very small very hands-on here at

    아시다시피 저희는 소규모의 와이너리이거든요.

    murdoch hill um you know we're only a small size winery um you know so there's a lot of detail

    in the processes so should we look at some of the grapes yeah let's have a look at this open

    fermenter here. So this was picked about a week ago. We tend to start the

    부드럽게 펌프 오버 해주면서 발효를 시작합니다. 이렇게 하면서 포도 껍질을 눌러 가라앉혀서

    fermentation with gentle pump overs. So what we're trying to do here is just

    포도 껍질에서 모든 색깔과 풍미를 뽑아내는 거죠.

    push down the skins and just extract all the colour and flavour out of those

    이산화탄소가 포도 껍질들을 위로 밀기 때문에 맨 위로 뜨거든요.

    skins because the CO2 pushes those skins up and they float on top. So we do

  90. 그래서 저희는 이걸 하루에 두 번 합니다. 한번 해보실래요? 네. 직접 해보는 것보다 나은 건 없죠.

    we have like a family lunch or something that sometimes the bottle just disappears and just

    And from then on, this wine has been one of the key wines in Australia and is known pretty

    all now around the world. And it has unique properties because of the site that it's in.

    So it has a true sense of place because the aroma profile of Mount Edelstone is like blackberry fruits,

    fresh sage leaves, black peppercorns. It has these lovely herbal flowering

    spices um aromas it's very pretty very fragrant and very velvety tannins on the finish do you

    think that's more due to its exposure or due to its soil or the age of the vines what brings about

    that character i guess arrangement of all those things so the deeper soils perhaps the aspect is

  233. 뜨거운 오후의 햇빛을 피할 수 있어요. Eden Valley의 더 서늘한 곳에 있기 때문에

    towards the east so it avoids any hot afternoon sun and yeah I guess it's in the cooler part

    of Eden Valley so it produces more of that red fruited, not that heavy.

    Very continental climate because we're higher, wetter, colder and we have larger day-night

    temperature differential and that's really important for varieties like

    Shiraz and varieties like Riesling because as those cold nights build the

    acidity in the wine and the warm sunny days and give you the sort of flavors

    you so we get quite lovely deep color from the Shiraz the tasting of the

    grapes in the vineyard is really important because you're looking for

    flavor but you're also looking for tannin maturity and that velvety-ness of

  243. 바로 쉬라즈의 벨벳같이 부드러운 타닌이 쉬라즈를 아주 매력적으로 만들어주는 요소에요.

    Shiraz is something that makes Shiraz very attractive because it's not

  244. 텁텁하거나 떫지 않고 무게감도 있으면서 섬세하고 맛있는 와인이에요.

    astringent, it's actually quite textural and fine and delicious and gives you

  245. 뒷맛까지 아름답게 길게 지속되는 와인이고요.

    beautiful length on the palate.

    So we've just seen the grapes being pressed off from a ferment that's finished, and this

    is actually quite dry.

    this was a time when fortified wines were very much in vogue and Cyril was a real pioneer and
