FAQ
What is the Europe episode of In-Flight Wine Club?
The second episode of Korean Air's in-flight wine documentary series In-Flight Wine Club. Marc Almert, ASI Best Sommelier of the World 2019, visits Champagne Henri Giraud in the Grand Cru village of Aÿ and the Argonne Forest in France, then the Drosselgasse, Kloster Eberbach and Weingut Robert Weil in Kiedrich in Germany's Rheingau.
Which Korean Air in-flight wines appear in the Europe episode?
Champagne Henri Giraud MV19 Aÿ Grand Cru and the 2021 Robert Weil Kiedrich Turmberg Riesling Trocken. In the film Marc Almert introduces MV19 as the champagne served in Korean Air's First Class, and Kiedrich Turmberg as the Riesling Korean Air serves in First Class.
What does 'MV' in Henri Giraud MV19 mean?
It stands for Multi Vintage. The film explains that MV19 has a 2019 base but also contains reserve wines from 1990 up to 2018, so some 30 years of harvests go into the bottle. The on-screen caption gives the blend as 80% Pinot Noir and 20% Chardonnay from Aÿ Grand Cru vineyards.
Why does Henri Giraud use oak from the Argonne Forest?
Since 2016 Henri Giraud has stopped using stainless steel and makes its wines in barrels of Argonne Forest oak. It traces each tree's age, number, geolocation and height, treating oak traceability as seriously as grape traceability. Oaks from poor soils grow sturdier and give finer, more elegant tannins, and winemaker Sébastien Le Golvet calls the Argonne Forest 'the DNA of champagne'. The Giraud family settled in the area in 1625.
Why is the Rheingau famous for Riesling?
Kloster Eberbach oenologist Katherin Puff explains that after monks began growing grapes in the Rheingau and searched for varieties that suited the climate, late-ripening Riesling, less exposed to late frosts, became the key grape. The film shows the invoice of Count Johann of Katzenelnbogen for Riesling vines as the first written mention of Riesling, and notes that the Rheingau has the highest share of Riesling of any region in the world.
What is Robert Weil's Kiedrich Turmberg?
Robert Weil has made only Riesling in Kiedrich since 1875; Wilhelm Weil is the fourth generation and his children the fifth. Turmberg is an Erste Lage (premier cru) vineyard first mentioned in 12th-century documents — 'Turm' means tower and 'Berg' hill. It is a dry (Trocken) Riesling with minerality from phyllite slate soils, and Wilhelm Weil says it pairs well with spicy Korean food such as kimchi and gochujang.

Hello. Hello. Marc Almert, nice to meet you. Nice to meet you, Emmanuelle Giraud. Welcome to Champagne, welcome to the house.
- Emmanuelle Giraud
It's a pleasure. I'm Emmanuelle Giraud.
- Emmanuelle Giraud
Welcome to Champagne.

Thank you for having us.

Thank you for having us. Thank you. It's a great pleasure being here and even some sun and we're
-
in Champagne. Yeah, it's a normal day in Champagne, a little bit better than yesterday but it's okay.
-
and i understood that you are the president of the whole company so it's very nice of you to

take some time to welcome us yes I've been the CEO for two years right now but i'm working in the

with my family and i think what confuses many people when we speak english we always say
-
champagne to every kind of sparkling wine but i think you want to make sure it's really strong
- Emmanuelle Giraud
appellation and strong protection and it's a good thing because we have only champagne from
-
champagne so can we look at how you make the yeah cool so here you are the center
-
wow of the winery we say le chai in francais it's very unusual for champagne winery so many barrels
- Emmanuelle Giraud
yeah it's a little part here no inox no inox no more
- Emmanuelle Giraud
Let me introduce you to my family.
- Emmanuelle Giraud
This is Sebastien.
-
Marc, nice to meet you.
- Sébastien Le Golvet
Nice to meet you, I'm Sebastien.
-
How are you doing?
-
This is Marc.
-
Thank you for having us despite your busy schedule.
-
It's an honor.
- Sébastien Le Golvet
Welcome to the heart of the Henri Giraud Cellar.
- Sébastien Le Golvet
We're at the epicentre of the estate,
- Sébastien Le Golvet
where we have all our barrels.
- Sébastien Le Golvet
The work we do here is special and requires precision.
-
And this isn't a typical Champagne cellar at all
-
because I don't see any stainless steel barrels.
-
Can you explain a bit about the barrels?
- Sébastien Le Golvet
We stopped working with stainless steel barrels since 2016.
- Sébastien Le Golvet
And since then, we have continued experimenting,
- Sébastien Le Golvet
We make our oak barrels using trees from the Argonne Forest.
- Sébastien Le Golvet
To obtain information about this forest, we traced and geo located it to understand its history.
- Sébastien Le Golvet
We have the age of the oak,
- Sébastien Le Golvet
the number of oaks, and the geolocation.
- Sébastien Le Golvet
This is the height of the tree.
- Sébastien Le Golvet
We work with different heights of trees
- Sébastien Le Golvet
because the height of the trees has a significant effect on the wine.
- Sébastien Le Golvet
The traceability of oak is as important
- Sébastien Le Golvet
as the traceability of the grapes in my opinion.
-
I think we are more used to tasting champagne that's aged in stainless steel.
-
Perhaps you can describe that difference in the taste and smell of the base wine?
- Sébastien Le Golvet
The greatest advantage of the oak barrels is that
- Sébastien Le Golvet
the wines are much finer, much smoother, and much more elegant.
- Sébastien Le Golvet
There is more precision and depth in the taste.
- Sébastien Le Golvet
I am surrounded by barrels - which are my world.
- Sébastien Le Golvet
Right behind you, is the 'Wine Globe.'
- Sébastien Le Golvet
This is the starting point for me.
- Sébastien Le Golvet
The starting point, and without meaning until we get any results.
- Sébastien Le Golvet
And from this point zero, I can work on tasting what's in my barrels.
- Sébastien Le Golvet
My vision for Henri Giraud wines is that
- Sébastien Le Golvet
the wines of tomorrow will be better than the wines of today.
-
Here's another underground space.
- Sébastien Le Golvet
It's bigger than it looks.
- Sébastien Le Golvet
The grapes of the Henri Giraud estate are very old,
- Sébastien Le Golvet
and harvested since the '90s.
- Sébastien Le Golvet
it's a compilation of all the harvests over the last 30 years, like magic.
-
So maybe you can explain a little how the second fermentation works?
- Sébastien Le Golvet
The second fermentation takes patience.
- Sébastien Le Golvet
This is a wine that's just been bottled.
- Sébastien Le Golvet
It will be stored here for about five years.
- Sébastien Le Golvet
And then we re going to get rid of this sediment.
- Sébastien Le Golvet
So first, we turn the bottles.
- Sébastien Le Golvet
We'll turn the bottles for a month.
- Sébastien Le Golvet
We'll move and turn the bottles like this.
- Sébastien Le Golvet
Actually I'm doing it in fast-forward,
- Sébastien Le Golvet
So you end up turning the bottle upside down.
- Sébastien Le Golvet
I did this very quickly.
- Sébastien Le Golvet
So, the bottle, you see the lees there, it's cloudy and it's right in the middle,
- Sébastien Le Golvet
but it's already starting to go down.
- Sébastien Le Golvet
So you see, we are going to turn the bottle delicately
- Sébastien Le Golvet
so that the sediment is trapped in the neck.
- Sébastien Le Golvet
And then there's the disgorgement (Degorgement).
- Sébastien Le Golvet
I'm going to show you how to disgorge a bottle.
- Sébastien Le Golvet
This is what we call Degorgement.
- Sébastien Le Golvet
We're getting rid of the lees
- Sébastien Le Golvet
to produce a wine that is both sparkling and brilliant.
-
So can we see the last stage of the second fermentation, Degorgement?
-
With pleasure, I'll show you that.
- Sébastien Le Golvet
What does champagne mean to me?
- Sébastien Le Golvet
For me, champagne signifies something special.
- Sébastien Le Golvet
It's something that people can enjoy and bond over...
- Sébastien Le Golvet
It's something that unites us.
- Sébastien Le Golvet
The wine for me is a great champagne wine.
- Sébastien Le Golvet
It's simply something that unites us.
- Sébastien Le Golvet
It's a shared moment that binds us- a social bond that's the basis of humanity.
- Sébastien Le Golvet
A great glass of champagne breaks down barriers.
- Marc Almert
Thank you for taking the time to taste MV19,
- Marc Almert
the same wine that is served in first class cabins of Korean Airlines.
- Marc Almert
- Marc Almert
but we can't give the whole wine away.
- Marc Almert
Would you show us the best way to open a bottle of champagne?
- Emmanuelle Giraud
We invented an uncorking tool.
- Emmanuelle Giraud
It's very easy.
- Emmanuelle Giraud
You just have to insert and push-
- Emmanuelle Giraud
but don't forget to hold the cork.
-
Just push it.
-
What does MV mean exactly?
-
MV means multi vintage.
MV 는 Multi Vintage의 약자이고,
-
So this is MV 19, which means the vintage has a 2019 base.
-
But this vintage also contains reserve wines from 1990 and up to 2018.
-
In other words, this vintage contains
-
a harvest and production history of our vineyard
-
for the past 30 years.
-
Can we taste it?
-
Yes, of course.
-
It's very complex.
-
Complex, but not complicated.
-
Yes, I agree, it gives you pleasure.
-
It feels quite nice.
-
Yes, the feeling is almost instant.
- Sébastien Le Golvet
What I notice right away is a bit of tangerine peel and grapefruit zest.
-
We spoke earlier about clay and minerals in the soil.
-
You can taste it a little, no?
-
I feel the limestone and a salty taste lingering on my gums.
-
That bit of saltiness is the hallmark of a great wine.
-
It ensures that the aromatic bouquet is
-
long-lasting when you taste wine.
-
The terroir here (Ay) is standard, yet unique.
-
And this is a wine that is truly extraordinary
-
because these wines are full-bodied and rich,
-
We say that this kind of wine has energy-
-
the wine is alive.
-
You can smell the bouquet as soon you get close,
-
which is very nice.
- Emmanuelle Giraud
Henri Giraud champagne is incomparable to others.
- Emmanuelle Giraud
It receives high marks, which isn't easy.
- Emmanuelle Giraud
It's important to hear what other people think.
- Emmanuelle Giraud
We got here because we searched for something that was different.
- Emmanuelle Giraud
The Argonne Forest,
- Emmanuelle Giraud
The Argonne wood in particular, the vine, and all that is a beautiful mix, a beautiful association.
- Emmanuelle Giraud
A beautiful combination of this and more.
- Emmanuelle Giraud
And today, all the work we do,
- Emmanuelle Giraud
the precision of our wine, the research that Sebastien does...
- Emmanuelle Giraud
This culminates in the production of a great wine.
-
Where are we exactly?
-
This area with light is the heart of the Ay terroir.
-
We only have pinot noir here.
-
It's where the vitality of Ay terroir comes alive.
-
A blend of chalk and limestone.
-
It's been around for millions of years.
-
We're just temporary tenants of the earth, of the planet.
-
That's what I think when I look at this area. It's humbling.
-
What we know of Henri Giraud champagne
-
has to be passed on to our children and to future generations.
-
We need to ensure their endeavors bring better results than the generations before them.
-
That's what we have to do for Henri Giraud champagne.
-
So this seems to be a very, very special place.
-
I've had Champagne in a lot of places, but never in a forest like this.
-
Where are we, Emmanuelle?
- Emmanuelle Giraud
So we are in the Argonne Forest, yes, so this one is a very remarkable tree.
- Emmanuelle Giraud
Since 400 years as our history, because my family is established in Aÿ since 1625.
- Emmanuelle Giraud
You are really in the historical forest of Champagne.
- Sébastien Le Golvet
We have a 40-year history with the Argonne Forest.
- Sébastien Le Golvet
We work with different terroirs in the Argonne forest
- Sébastien Le Golvet
Not only do we harvest here, We can select our own trees,
- Sébastien Le Golvet
and the various terroir within the forest leaves their signature on the wine.
- Sébastien Le Golvet
We're not necessarily looking for big trees
- Sébastien Le Golvet
we're looking for oaks that can survive even in less ideal soil conditions.
- Sébastien Le Golvet
The soil of oak barrens make for sturdier trees.
- Sébastien Le Golvet
There are less tannins, giving way to more delicate and elegant tannins.
- Sébastien Le Golvet
That's what we really look for.
- Sébastien Le Golvet
For me, the Argonne forest is the DNA of champagne.
- Sébastien Le Golvet
The barrels in our wine-making is of utmost importance.
- Sébastien Le Golvet

so hello Katherin hello Marc so we're going to the Kloster yeah right so thank you for
- Katherin Puff
visiting us i show you the different locations here at the monastery today where the monks
-
started making wine so let's walk through a little bit of history sure looking forward
- Katherin Puff
yeah so here we are inside of the monastery already that's the cloister
- Katherin Puff
and you see us in the center this beautiful well garden
-
so now we are going to see some old presses yes so you can see these presses we can enter here
- Katherin Puff
now we have the old presser standing in here. One of this press actually holds so many grapes that
- Katherin Puff
would the juice that comes out would fit into one barrel so one press one barrel and yeah so
- Katherin Puff
but they are already for a long time not in use anymore but it's like beginning of the 19th
-
century they stopped using them. Let's go inside. Yes so I show you now the basilica and here you
- Katherin Puff
You can see lids of tombs and one of these noble family was called Grafen von Katzenelnbogen.
- Katherin Puff
There's one particular man, we call him Mr. Riesling, because it's probably the first
- Katherin Puff
time that there is ever written a document about Riesling.
- Katherin Puff
Johann actually was the one, we could find back then a document, 13th century, that he
- Katherin Puff
bought Riesling grape vines to plant a vineyard.
- Katherin Puff
So that's the first time that ever you can see Riesling was mentioned.
-
So let's have a look at some more of the monastery.
-
So now we go to the ice cellar.
- Katherin Puff
Yes, and from the ice cellar, we go then to our Schatzkammer.
-
It's a library of the monastery, the liquid library.
- Katherin Puff
In the light, we try to keep artificial light away.
- Katherin Puff
We are storing every vintage from the most important vineyards and the most important
- Katherin Puff
qualities around 30 to 50 bottles.
- Katherin Puff
So every year we put in.
-
So should we taste some of the 1950s?
- Katherin Puff
Yes, and this is especially for you.
- Katherin Puff
You can open it now.
-
So wow, that's really a treasure you pulled out from the center.
-
Thank you for sharing that.
-
Riesling, Rheingau, why is that such a great link and has been since so many years?
- Katherin Puff
then the monks they started cultivating wine here in the area Rheingau also through the years had
- Katherin Puff
to see which varietal copes best with the climate so probably they started with other grape varietals
- Katherin Puff
could be Pinot Noir, Klebrot but there was an issue with obviously late frost and the whole
- Katherin Puff
harvest would be gone. So the development that the growing of Riesling became more important
- Katherin Puff
was also due to the later ripening of the Riesling and therefore it was not affected with late frost
- Katherin Puff
as much as other grape varieties. Still today with Riesling and it's our main variety and because the
- Katherin Puff
climate is and the soil also good and it shows also the Rheingau has always been very famous for
- Katherin Puff
Riesling. For us Riesling is a lifestyle but it's also a historical part of us.
-
should we taste the yes cheers to Riesling cheers to Riesling

Hello. Hello, welcome at Robert Weil Estate. Thank you for having us. It's my great pleasure. It looks
-
very different to last time. Yes, we had some renovation in our winery, but the same vineyards
-
- Cool, looking forward to taste some.
-
- Okay, please come in.
-
So, should we head down to the cellar?
- Wilhelm Weil
- Yes, if you like, we can go in the traditional cellar.
- Wilhelm Weil
I like to introduce to you the wood barrels
- Wilhelm Weil
and all the wines so that you have a good impression
-
what we do with this new vintage.
-
- Please come in.
-
- So how old is the cellar?
- Wilhelm Weil
- This is the oldest part of the cellar.
- Wilhelm Weil
It's nearly 300 years old.
-
Please.
- Wilhelm Weil
Here you see the traditional Rheingau sizes of wood barrels.
- Wilhelm Weil
These are wood barrels, oak, 1,200 liters.
- Wilhelm Weil
And in these wood barrels we fermented our great dry wines, and also the storage we have
- Wilhelm Weil
for the micro-oxidation, also the Turmberg we ferment in these wood barrels.
-
And I think above here is the house where you grew up?
- Wilhelm Weil
Yes, I was born in this house and I have a very close contact with this total atmosphere
-
of the region of Rheingau, of the small village Kiedrich and also with our winery.
-
Yes, of course, please come.
-
So Mr. Weil, this looks like a very special place.
- Wilhelm Weil
Yes, this is our traditional manor house with traditional furniture.
- Wilhelm Weil
Everything is original since the starting of the business of my great-grandfather in 1875.
-
So how many generations have lived here?
- Wilhelm Weil
I'm the fourth generation and my children are the fifth generation.
- Wilhelm Weil
My whole child time I stay also at Robert Weil Estate and therefore I have a very, very close contact
- Wilhelm Weil
with this region, with this winery, with the nature and especially with the wine growing.
- Wilhelm Weil
So my great-grandfather visited very often this region and he bought in the year 1867
- Wilhelm Weil
his first vineyards. This was a very good investment in this time because Rheingau
- Wilhelm Weil
Riesling wines have a very high reputation in this time. Burgundy, red and white. Bordeaux,
- Wilhelm Weil
Rheingau Riesling and this was Champagne. And these four great wines in this time were
- Wilhelm Weil
in the leading position and this was the reason why my great-grandfather invested in wine.
- Wilhelm Weil
And my whole family started in this business. My grandfather, also my father and now I'm
- Wilhelm Weil
I am the fourth generation and also my children started in the wine business in this winery.
-
You produce only Riesling, correct?
- Wilhelm Weil
Only Riesling, 100% Riesling, because we have one of the greatest terroirs all over the world for grape Riesling.
- Wilhelm Weil
We have this very long experience that we have the best terroir for Riesling wines.
-
So now I think I'm getting thirsty, should we go and taste the Kiedricher Turmberg?
-
Yes, of course, it's my great pleasure.
-
Cool, thank you.
-
So, you are opening the Kiedricher Turmberg now.
- Wilhelm Weil
Now we start with Turmberg.
- Wilhelm Weil
Turmberg is Erste Lage, means Premier Cru.
- Wilhelm Weil
And this is a very old traditional vineyard.
- Wilhelm Weil
We have old papers.
- Wilhelm Weil
And this vineyard was first time mentioned in the 12th century.
- Wilhelm Weil
Turm means tower, and Berg means hillside, but it's one of the finest white wines all
- Wilhelm Weil
over the world, a wine with a very good minerality, with very good elements, but also richness
- Wilhelm Weil
and full body.
-
So when you taste Turmberg, what are the key flavours or aromas you look for?
- Wilhelm Weil
And a taste based mainly on the soil type, it's a phyllite slate, so the wine shows a
- Wilhelm Weil
very good minerality, it shows a complex fruit, but also enough body and richness, it's absolutely
-
see "trocken" on the label. Is that how Rheingau has always been or was it traditionally more sweet?
- Wilhelm Weil
In former times we have a higher percentage of traditional type of wine with a little bit more
- Wilhelm Weil
sweetness. In today's time more and more the focus is on the dry style wine. So wines are absolutely
- Wilhelm Weil
dry. It's important to look on the label. These wines have "trocken" and "trocken" means without
-
any residual sugar. So as you know we are pouring the Kiedricher Turmberg on Korean air first class.
-
Why do you think we chose it? Is there something that you would like to eat from Korea with this
-
wine? Yes of course I think also Korean food is not too rich, not too heavy and all these wines
- Wilhelm Weil
are not too heavy they are very well balanced but also it is easy in food in in general you know it
- Wilhelm Weil
was one of the reasons why we chose this because i think with some of the more spicy dishes
-
especially kimchi also the chili paste then i think this works very very well yeah it's my
-
great pleasure and i think a good match between food and wine it's very important that your guests
-
and the airlines are very very happy and so I'm sure this is really a great match.
-
Should we go to the vineyard? Of course, the vineyard is most important.
-
This is my main job, the vineyard. Cool, thank you.
-
So, Mr. Weil, this seems to be a beautiful place.
-
Yes, this is the border between the vineyard Grafenberg and the vineyard Turmberg.
- Wilhelm Weil
It's a small vineyard, only 3.8 hectares, as a monopole vineyard, and it's a vineyard
- Wilhelm Weil
with a very, very strong character of wine type.
- Wilhelm Weil
Some aspects of Moselle, some aspects of Rheingau, some aspects of Nahe, and here you see also
- Wilhelm Weil
the tower, and it's on the top of the vineyard Turmberg, it's a very, very steep vineyard,
- Wilhelm Weil
slate vineyard, it's a great, great vineyard.
- Wilhelm Weil
The terroir of Turmberg is a hillside vineyard, not too hot
- Wilhelm Weil
terroir. The main aspect is a long hang time,
- Wilhelm Weil
the limited sugar content in the grapes that is possible to have more than 120
- Wilhelm Weil
days after blooming hang time and based on this concentration of small
- Wilhelm Weil
grapes, very healthy grapes. It's very very important to harvest by hand picking very
- Wilhelm Weil
healthy grapes and the limited sugar content means limited alcohol content in the wine.
- Wilhelm Weil
You can produce a very unique type of wine and I think this is an absolutely key factor because
- Wilhelm Weil
too high alcohol in the wine works against the elegance, the ripeness and the balance in our wines.
- Wilhelm Weil
Great wines should be unique, unique based on the terroir and the next aspect is the
- Wilhelm Weil
aging potential of this vineyard and they will be better from year to year.
-
I think one thing to keep in mind when standing in this vineyard, Rheingau is really the region
-
in the entire world with the highest percentage of Riesling.
-
So, would it be correct to say everything we see around us is Riesling?
-
Cheers to that.
건배!
