The third and final episode of Korean Air's in-flight wine documentary series In-Flight Wine Club. Marc Almert, ASI Best Sommelier of the World 2019, and sommelier James Sangjun Lee, Korean Air's wine consultant, visit the Napa Valley Wine Train, Merryvale Vineyards, Paul Hobbs Winery, Oxbow Public Market and Shafer Vineyards in California's Napa Valley and Sonoma County.

Which Korean Air in-flight wines appear in the United States episode?

Three wines: Shafer TD-9 (a Cabernet Sauvignon-led blend), Paul Hobbs Russian River Valley Chardonnay and Merryvale Silhouette Chardonnay. James Sangjun Lee says he always chose TD-9 when training Korean Air's First Class crew, and that the Paul Hobbs Chardonnay was one of the best Chardonnays chosen for the Korean Air selection when he and Marc Almert tasted.

Why are in-flight wines chosen for pronounced flavours?

The film explains that on a plane you perceive about 30% less aroma and flavour than usual, so the aim was to choose wines with more pronounced flavours, citing Merryvale's Silhouette as an excellent, balanced example. The closing card states that all wines served on Korean Air flights are carefully selected to suit the in-flight environment.

What is Shafer TD-9?

Presented by Shafer winemaker Elias Fernandez, the 2021 TD-9 is about 75% Cabernet Sauvignon blended with 11% Merlot, 10% Petit Verdot and 3% Malbec. The film introduces Napa's Stags Leap District as known for intense red wines with soft tannins, where evening breezes from San Pablo Bay cool the vineyards and keep freshness and acidity. The on-screen caption describes black cherry, black currant and cocoa.

How does Shafer run a sustainable winery?

Managing director Matthew Sharp says Shafer became the first winery in the US to run solely on solar power in 2004. The vineyards use no pesticides; hunting perches for red-shouldered hawks and owl boxes control rodents, and AI-linked water pumps water only the vines that need it. Shafer began when John Shafer moved to Napa Valley in 1973, and Elias Fernandez joined in 1984.

What are Merryvale and its Silhouette Chardonnay?

Merryvale in St. Helena was the first winery built after Prohibition was repealed in 1933 and has a Cask Room dating from 1881. Head winemaker Jeff Crawford, there since 2007, presents the 2021 Silhouette as the flagship Chardonnay, grown at Stanly Ranch in Carneros, Napa's southernmost area, cooled by breezes from San Pablo Bay.

How does Paul Hobbs describe Russian River Valley Chardonnay?

Paul Hobbs names a 'crunchy' texture as what sets Russian River Chardonnay apart, with Meyer lemon and a mineral tension from the acidity. In the cooler, fog-influenced western Russian River with its Goldridge soil, roots grow deep. For pairing, James Sangjun Lee suggests grilled fish such as sea bass or snapper, and Paul Hobbs adds that it also works with good red meat without heavy sauce.

  104. Napa Valley itself as a wine growing region has quite a bit of history,

    The original settlers to Napa came here looking to strike it rich.
